It has been less than a week since I wrote that I was changing my diet to exclude all processed foods as well as cows milk, trans fats, breads and more. Let me tell you that so far the progress has been amazing. I feel a lot better and besides the few days with headaches which are probably results of detoxing, I have been fine.
My energy levels are also a lot better and I seem to be less bloated than I previously was too. All in all I am very happy with my progress so far and can only recommend you do the same if you happen to suffer from any serious health issues.
As far as the food is concerned I have used a surprising amount of ideas at the drop of the moment to create my dishes. So far I also haven’t gotten bored on these choices and they do taste very yummy. I eat a lot of salad and use only lemon juice, little olive oil and sometimes yoghurt and some mustard to season and emulsify the dressing. Sometimes I even eat the salad without sauce. It’s nice and refreshing.
I also ate at least 4 servings of fish in the past week which is new for me and cut out all meats as for now. In the future I might re-introduce chicken, but it also depends on how boring I get.
